The Tölzer Butterkäse is a semi-solid to firm cheese that should preferably be made without perforation. It is distinguished by its mild and subtle sour smell and taste. A typical characteristic of the butter cheese is the supple skin in yellow-brown to reddish color, which encloses the yellowish cheese. According to the original recipe, the Tölzer Butterkäse is a raw milk cheese that is made by hand in a loaf form with a weight of up to 2.5 kilograms. Tölzer Art butter cheeses are currently better known, and are not produced exclusively according to the original recipe, but are a type-typical and delocalized production.
